Chicken Marsala

On the rare occasion that me and Louis go out to eat he will usually either order a huge honking steak or chicken Marsala, and since it had been a while since we have went out to eat I decided to surprise him by making him some homemade chicken Marsala. 

What you'll need:
3-4 chicken breast sliced and pounded flat
Olive oil
1 1/2 cups all purpose flour (seasoned with salt and pepper) 
4 tablespoons butter 
1 medium onion
8oz container of baby Bella mushrooms washed and sliced
1 teaspoon of chicken base
1/4 cup of water
1/2 cup Marsala wine
1/4 cup white wine
2 tablespoons of heavy cream 
2 teaspoons Dried parsley
2 teaspoons corn starch

Heat olive oil in a pan over medium-high heat.

Take the chicken cutlets and dip them in the flour mixture and place 2-3 cutlets in the hot oil.

Fry a few minutes on each side until cooked through

Set aside on a plate lined with paper towels.

If there is a lot of oil left in the pan after frying drain some of it out.
Lower the heat to low-medium.
Add 4 tbsp butter to the pan that you cooked the chicken in.

Add the onions and cook for one minute.

Add the mushrooms to the pan and cook for another two minutes

Add the rest of the ingredients and raise heat to medium heat to and let mixture simmer until it has reduced and become some what thicker.

Serve chicken and Marsala mix over some pasta, and garnish with some parsley.
